Shredded Crispy Hoisin Duck Burger

Imagine crispy hoisin duck pancakes sandwiched within a sweet brioche bun. Well, here is the simple easy recipe. We have this on repeat in our house, delicious, easy and a little something special.

Serves: 2

Cooking time: 1 hour 45

Ingredients:

  • 2 Duck Legs
  • 2 tsp Chinese 5 Spice
  • 1 Orange
  • 3 tbsp Hoisin Sauce
  • 2 Brioche Buns
  • 3 Spring Onions
  • Wedge of Cucumber
  • 1/4 Red Cabbage
  • Handful Rocket
  • Mayonnaise

Instructions:

  1. Preheat the oven to 180℃ fan, and place the duck legs on a baking tray.
  2. Pat the duck dry with some kitchen towel, then cut the orange in half and squeeze over each leg. Place the remaining squeezed orange in the baking tray with the duck.
  3. Next, sprinkle 1 tsp of Chinese 5 spice on each leg and rub in. Place in the oven for 1 hour 30.
  4. When the duck is nearly ready, finely slice the spring onion and cucumber into strips (similar to those you get in the pancakes). Slice off a little red cabbage to act as a lettuce bed.
  5. Slice the brioche buns in half, and slightly toast by lying on top of the toaster, middle side down for a minute.
  6. When the duck is ready, remove from the oven and begin pulling apart with two forks, shredding it. Once all pulled, remove the bone and add the hoisin sauce. Pull through and place back in the oven for a further 5 minutes.
  7. Begin assembling the burgers. Spread a layer of mayo on the bottom bun, followed by some rocket on each and red cabbage placed on top. Get the sticky duck from the oven and divide between the two burgers.
  8. Place the cucumber and spring onions on top, followed by the bun lid with a little extra hoisin spread on.

Serving Note: Best served to Anderson Paak's "Malibu" album, trying to fit as much in your mouth as possible.
