Caramelised Onion Sausage and Blue Cheese Carbonara

Yet another take on the classic favourite, and yet another winning recipe which has become a regular of ours. The sweetness of the sausage balances out the blue cheese which goes perfectly with the creamy pasta. A hug in the bowl which is easy and quick to whip up for those days you crave carby comfort food.

Serves: 2

Cooking time: 30 minutes

Ingredients:

  • 3 Caramelised Onion Sausages
  • 1 Onion
  • 3 Garlic Cloves
  • Dash of white wine vinegar
  • 4 eggs
  • 250g Linguini
  • 75g Parmesan
  • 50g Blue Cheese
  • Salt & Pepper
  • Olive Oil

Instructions:

  1. Start by removing the sausage from the skin and putting in a pan on a medium heat to begin caramelising ~5 mins.
  2. Dice the onions and crush the garlic. Once the sausage begins to go golden, turn the heat to low and add the onions and garlic. Let them soften along with the vinegar.
  3. Boil the kettle and cook the pasta for 10 minutes until al dente.
  4. In a separate bowl, whisk the eggs together and season generously.
  5. Grate parmesan and add to the eggs, along with 3/4 of the blue cheese.
  6. Once the pasta is ready drain, turn off the heat from under the onion and add the pasta to the pan.
  7. Create a well in the center and pour in the egg mixture. Combine and stir quickly until everything is mixed well and the sauce becomes glossy.
  8. Serve with the remaining blue cheese, cracked black pepper and a generous grating of parmesan.

Serving Note: Best served with a little red wine, listening to some Percy Sledge.
