Chilli, Garlic and Lemon Tiger Prawn Sharer Skillet

For those seeking the perfect appetizer for a date night or just a flavorful treat, this recipe is an ideal starter. Fresh tiger prawns marinated in a zesty mix of chilli, garlic, and lemon make this a delightful dish.

Serves: 2 as a main, 2-3 as a starter

Cooking Time: 20 minutes + 5 hours marinating

Ingredients:

For the Marinade:

  • 12 Fresh Shell-on Tiger Prawns
  • 3 tbsp Olive Oil
  • 1 Red Chilli
  • 3 Large Garlic Cloves
  • 1 Lemon
  • Sprig of Parsley
  • Salt & Pepper

To Cook & Serve:

  • 4 Sweet Small Peppers
  • Knob of Butter (and more for serving)
  • Fresh Baguette
  • 1 Lemon (for serving)

Instructions:

  1. Begin by preparing the marinade. Finely chop the chilli, crush and chop the garlic, zest and juice the lemon (save the lemon remains), and chop the parsley. Combine these in a ramekin with olive oil.
  2. In a bowl, coat the prawns with the marinade. Include the lemon remains you set aside. Cover with cling film and refrigerate for 5+ hours.
  3. When ready to cook, heat a skillet/frying pan on high. Meanwhile, char the peppers on another hob ring until they turn black/burnt. If you don't have a gas hob, use a grill. Rotate peppers for even charring.
  4. As the skillet becomes hot, melt a generous knob of butter. Bring out the marinated prawns from the fridge and place them in the skillet.
  5. Slice a portion of the baguette and toss it into the skillet to absorb the flavors. As the prawns turn pink, add another knob of butter and the charred peppers. Total cooking time is about 5-7 minutes. Use the prawn colour as an indicator: once pink, remove from heat.
  6. Garnish with more parsley, and serve with additional lemon slices and a good amount of bread and butter.

Serving Note: Pair with a chilled glass of Pinot Grigio. Set the mood with some tunes from Percy Sledge for a perfect evening.
