Slow Cooker Red Wine Pulled Pork Ragu

Pulled pork is always delicious, especially when pulled in a rich, sweet, deep sauce and mixed in with some pasta, what a perfect night in this makes for. This is a very similar recipe to my Caramelised Onion Sausage Ragu, but the pulled pork makes it that bit more of a treat. Perfect for a date night where you can share the rest of the wine and just chill out.

Serves: 3 -4

Cooking time: 20 minutes prep before 6+ hours in the slow cooker

Ingredients:

  • 1kg Pork Leg Joint
  • 1 Onion
  • 3 Garlic Cloves
  • 2 Carrots
  • 500 ml Beef Stock
  • 250 ml Red Wine
  • 400g Chopped Toms
  • Rosemary
  • 4 tsp Demerara Sugar
  • Dash Worcester Sauce
  • 100 ml Milk
  • 2 tbsp Cornflour
  • 175g Rigatoni Pasta
  • Parmesan
  • Salt and Pepper
  • Olive Oil

Instructions:

  1. Start by dicing the onion and softening over a medium heat with a glug of olive oil.
  2. Peel and crush the garlic and add to the pan, sautéing for a couple of minutes before removing from the heat and adding to the slow cooker pot.
  3. Roughly chop the carrot and add to the slow cooker pot along with the pork, stock, wine, chopped tomatoes, sugar, Worcester sauce, and a few rosemary sprigs.
  4. Season and put on a low heat for 6+ hours, or a high heat if you have less time.
  5. A few hours in, remove the fat from the pork and add in the milk. Feel free to give it a taste and add any more seasoning.
  6. After 6+ hours of cooking, turn off the slow cooker and decant the cooking liquid into a deep pan on a medium heat.
  7. In a separate dish, mix cornflour with a few tablespoons of the liquid to form a paste. Add this back to the pan and stir in, allowing it to simmer and reduce for approximately 30 minutes.
  8. Pull the pork apart with two forks until shredded, and mix it into the reduced cooking liquid.
  9. Cook the pasta as per package instructions and maintain a medium heat under the ragu.
  10. For added flavor, pour a dash of extra wine into the ragu. Stir in the cooked pasta and serve.
  11. Garnish with generous amounts of grated parmesan.
