Classic Chilli Con Carne

Everyone has a recipe they love for the classic chilli, and this is mine. Mainly because the slow cooker does the cooking for me, and it has the right amount of spice and warmth to be comforting on the colder evenings. Pair it with whatever you like, rice, a jacket potato, nachos and the list goes on, but always with a glass of Red.

Serves: 4


Cooking Time: 20 minutes prep + 6-12 hours slow cooking

Ingredients:

  • 1 Onion
  • 3 Garlic Cloves
  • 500g Beef Mince
  • 500ml Beef Stock
  • 1 Tin of Chopped Tomatoes
  • Dash of Worcester Sauce
  • 1 tsp Cumin
  • 2 tsp Smoked Paprika
  • 2 tsp Mild Chilli Powder
  • 1 tsp Hot Chilli Powder
  • 1/2 tsp Cinnamon
  • 2 tsp Granulated Sugar
  • Jalapeños (to taste)
  • 1 Green Chilli
  • 1 Tin of Red Kidney Beans in Chilli Sauce
  • Dash of Red Wine
  • Salt and Pepper to Taste
  • 2 tbsp Cornflour
  • Olive Oil

Serve With: Rice, Nachos, Guacamole, Soured Cream, Cheddar Cheese, and Lime.

Instructions:

  1. Start off by dicing the onions and sautéing them in a frying pan with some oil.
  2. While the onions begin to soften, crush and finely dice the garlic. Add it to the onions and sauté on a medium heat for about 3 minutes. Once softened, transfer to the slow cooker.
  3. Return the pan to the heat and brown the beef mince, breaking it apart slightly. Once browned, add it to the onions and garlic in the slow cooker.
  4. Next, add the chopped tomatoes, beef stock, Worcester sauce, all the spices, jalapeños, roughly chopped green chilli, and sugar to the slow cooker. Season as needed.
  5. Set the slow cooker on a low heat setting and let it cook for 6-10 hours.
  6. About 1-2 hours before you plan to eat, stir in the kidney beans and a dash of red wine. Taste and adjust seasoning if needed.
  7. An hour before serving, put the cornflour in a ramekin and mix with a couple of tbsp of the sauce from the slow cooker pot. Once combined into a paste add back to the slow cooker and stir in, leaving the slow cooker lid off.
  8. Prepare your chosen sides and serve spooned over.
