Prawn Katsu Burgers with Sriracha Slaw

If all these components excite you separately, then trust me when I say they are banging together. It may not be entirely healthy, but it does taste fresh and so worth every single mouthful. A fun alternative when you fancy satisfying that burger craving we all know and love.

Cooking time: 25 minutes

Ingredients:

For the Prawn Patty:

  • 165g Pack of Raw King Prawns
  • Half Red Chilli
  • Thumbnail Size Piece of Fresh Ginger
  • 2 Spring Onions
  • Squeeze of Lemon
  • 1 Egg White
  • 1 tbsp Cornflour
  • Panko Bread Crumbs

For the Slaw and Burger:

  • 2 Brioche Buns
  • 1 Carrot
  • 1/4 Red Cabbage
  • 2 tbsp Mayonnaise or Natural Yoghurt
  • 1 tsp Sriracha
  • Little Gem Leaves
  • Sweet Chilli Sauce
  • Sunflower/ Vegetable Oil for Frying
  • Salt and Pepper to taste

Instructions:

  1. Start off by making the prawn patty. Grate the ginger and roughly chop the chilli and spring onions.
  2. Throw all the patty ingredients except the bread crumbs into a food processor and blitz until all combined.
  3. Pour a generous portion of bread crumbs onto a plate ready to coat the prawn mixture.
  4. Take roughly half the prawn mix and form a patty-like shape in your hand (it can be a bit sloppy, but don't worry, that's how it should be), and roll in the bread crumbs until evenly coated. If the mixture is very sloppy, just throw some breadcrumbs over it until coated, and mould it into a vague patty shape, moving it minimally. Put to one side.
  5. Next, make the sriracha slaw. Start by roughly slicing the red cabbage and grating the carrot into a bowl.
  6. In a smaller bowl, mix the mayonnaise/natural yoghurt with sriracha before combining it with the red cabbage and carrot. Season with salt and pepper.
  7. Slice the brioche buns and toast slightly by placing them on top of a toaster briefly.
  8. In a deep frying pan, cover the bottom with a generous portion of oil and heat for a couple of minutes. To test its temperature, throw in a breadcrumb; if it sizzles and begins to brown, it's ready.
  9. Carefully place the prawn patties in and cook for ~3 minutes before flipping (carefully). Once golden, remove and set aside.
  10. Time for the burger assembly. Divide your slaw between the two bottom buns, then add your prawn patty and lettuce. Add a generous portion of mayonnaise and sweet chilli sauce.

Serving Note: Best served while relaxing on the sofa after a busy day, watching a gripping crime drama in the dark, so no one can watch you smear the deliciousness all around your face.
